Ingredients for the vegan Shakshuka:
1 large onion, sliced
2 garlic cloves, sliced
olive oil
1 red pepper (2 if they’re small), deseeded and sliced
1 teaspoon ground coriander
1 teaspoon ground cumin
1⁄2 teaspoon paprika
1⁄2 teaspoon cayenne pepper
1 × 400g tin of plum tomatoes
2 tablespoons tomato purée
salt and pepper
